Scrambled eggs with attitude

Staying on the food theme, this is how I cook scrambled eggs.

Finely chop some onion - I use one medium onion per person. Sizzle it in your chosen fat - butter, margarine or olive oil until it softens and just begins to colour.

Tip in your eggs and stir around gently over a low flame. They will cook very quickly because of the hot onion. If you are feeling a little naughty, stir in a little cream. If you are feeling really wicked and self-indulgent, stir in some cheese - I use Parmesan. But even without either of these additions, it’s still delicious.

Season to taste. And voila! Scrambled eggs with attitude.

I usually dress up my scrambled eggs too — they’re pretty boring otherwise. Chives are nice in them too…

Yes, I like them with chives, too. When I’m rushed, lazy or stuck for ideas, scrambled eggs on toast are my mainstay (provided our lazy little bantams have done the necessary!). But on their own, as you say, there’s not much to them.
